Little Treatise on Dried Cod

It is difficult to know who was the first to process cod. Probably the Vikings, who fished it in the North Sea. Later, fishermen from the Basque coast skimmed the waters of Newfoundland and dried the cod, but above all they covered it with salt to bring it back home. Salt cod was born.
